After destemming and complete sorting of the harvest, the fermentation of the musts starts spontaneously thanks to the indigenous yeasts. Fermentation lasts about 30 days under constant control winemaking temperatures. This process promotes expression fruity Cabernet Franc. Bottling takes place the following fall. Between 15 and 18 ° – superb from 5 to 7 years old – extraordinary around 10 years old. Perfect with a casserole pheasant, a square lamb in herb crust, pheasant and mushroom fricassee, cranberry boar, braised beef chuck, deer hazelnut with pepper sauce, or a rack of lamb roast. A deep ruby colour with a captivating, powerful & complex nose with rich notes of black fruit and spices. A generous, ample, structured and balanced on the palate. The tannins dense and promising exhale superb aromas of fruit.
